Bulgur with tofu and vegetables
A fantastic vegetarian plate. Do you know what bulgur is? Bulgur wheat has a mild and somewhat nutty taste. It is a very small grain compared to some others and has a chewy texture.
INGREDIENTS:
cherry tomatoes
chopped parsley
lemon juice
spring onion
tofu
olive oil
salt and pepper
METHODS:
- Set Retigo combi oven on steam mode at 99°C for 25 minutes. After the combi oven is preheated insert stainless steel GN container 60 mm with 2 kg of rinsed bulgur immersed in 4 litres of hot water and a bit of salt.
- Set Retigo combi oven to 190°C for 6 minutes and put Retigo snack GN container with diced tofu and a bit of olive oil.
- Combine cooked bulgur with parsley, chopped cherry tomatoes, lemon juice, tofu, olive oil, salt and pepper.
